🥩What are country style ribs
This might sound confusing but country style ribs are not ribs at all. Since we are using beef here, not pork, I'm just going to explain the beef version.
These boneless cuts of beef are actually from the chuck eye roll. The steaks from that area are cut in two. If you are interested in more detail, you could check out "Beef, It's What's for Dinner" site.
⏲️ Cook Time
Traditionally, country style ribs need to cook low and slow. Most recipes call for sitting in the slow cooker for 8 hours or in the over for about 2 hours.
I decided to experiment with my new handy dandy Instant Pot. Pressure cook time is 45 minutes. Please note, the total time is not 45 minutes. Plan on a little longer for time to build pressure and time to naturally release pressure.
🧂 Seasoning
For a flavorful cut of meat like this, I keep things fairly simple. The only seasoning I used was a Montreal Style Steak Seasoning. This type of seasoning is one of my go-to for a lot of dishes. It contains salt, black pepper, garlic, onion and paprika.
If you don't have access to this seasoning, you can season with whatever type of rub / seasoning blend you prefer on beef. A good combo would be salt, pepper and garlic powder.
🔪 Cooking instructions
Start by seasoning the beef as I mentioned above.
Next, pour the broth into the Instant Pot and place the ribs right in there. No need for a trivet here.
Set the Instant Pot to high pressure / manual pressure for 45 minutes.
Once 45 minutes is up, allow the Instant Pot to naturally release pressure. This means, wait for the pin to drop on it's own, don't move the valve to release the pressure.
The reason for the natural release is it results in a more tender result. When the pressure is released manually, meat, particularly beef, seizes up and gets tough. We do not want tough beef.
Remove the beef from the Instant Pot and place on a lined baking sheet. Brush with BBQ sauce of choice and place under the broiler for just a few minutes.
🍚 Side dish

- air fryer loaded potatoes
